Methi Gaajar/Carrot Dal Ingredients:
How To Make Methi Gaajar/Carrot Dal:One and half cup toor dal, Three cups chopped methi leaves, Two medium sized carrots, Two tbsps green chilly paste, Half cup groundnuts, One pinch asafoetida(Hing), Half tbsp sugar, Two-three dry red chillies, Two tbsps wheat flour, Five-six curry leaves, Half tbsp mustard, Half tbsp cumin seeds, Half tbsp turmeric powder, Two-three tbsps tamarind juice, Two-three Oil and Salt to taste
Cooking toor dal in a pressure cooker,set aside to cool. Finely chop the carrots,wash methi leaves and drain the water.Soak groundnuts in hot water for 10-15 minutes. Heating two tbsps of oil in a pan,add methi leaves,chopped carrots and soaked groundnuts. Then frying for about two-three minutes,add cooked dal and pour water to dilute the dal. Add salt,sugar,hing,turmeric powder,green chilly paste and tamarind juice. Make a thin paste of Wheat flour using water,keep stirring the dal & pour to it. Heat Two tbsps of oil in a pan,add mustard & cumin seeds.When they start to pop up,add red chillies,curry leaves and switch off the stove.(This will be used for tadka) Cooking for about ten-fifteen minutes,add tadka,close the lid of pan and switch off the stove. Serve hot with rice,roti or chappati.
