MUTTER(MUTTUR)PARATHA RECIPE

For Stuffing:Two cups whole wheat flour(Atta), Warm water(as needed), Half cup cup maida, Half tbsp salt and One third cup butter/ghee,
How To Make Mutter Paratha:Two tbsps Oil, One tbsp fresh ginger Two-four minced green chillies, Quarter tbsp Asofoedita Powder(hing), Two-three cups cooked & coarsely mashed mutter(green peas), Two tbsp garam masala powder, Half tbsp red chilli powder, Two tbsps lemon juice, Two tbsps jaggery(gur), Finely chopped coriander, Butter/oil for frying and Salt to taste
Make dough out of whole-wheat flour(atta),as is made for any parantha or roti half an hour before. For stuffing,heat oil in a kadhai over moderate flame,adding in ginger and green chillies. Fry until ginger starts turning brown,then add some asofoedita. A few seconds later add the peas. Add remaining ingredients and stir-fry for about 2 minutes. Removing the pan from the heat,allow to cool.Divide the mixture into equal portions. Now making the dough into a ball fill the above stuff into it. Now roll the dough ball into the form of roti,taking care that stuffing does not come out. Roast the rolled dough over a pan as done for roti. When top side is done change the side and roast it on other side as well. Cook on a low heat till golden brown. Serve mattar parantha hot with yogurt(curd),chutney or with pickle.
