Kashmiri Biryani

KASHMIRI BIRYANI RECIPE

Ingredients:

  • 500 grams chicken,

  • 500 grams basmati rice,

  • One cup curd,

  • One tbsp red chilli powder,

  • One tbsp coriander powder,

  • One tbsp garam masala,

  • Half tbsp turmeric powder,

  • Quarter tbsp saffron,

  • Two-three bay leaves,

  • Three-four cardamoms,

  • One inch cinnamon stick,

  • Four-five cloves,

  • Ten-twleve cashewnuts,

  • Half cup chopped coriander leaves,

  • Quarter cup chopped mint leaves,

  • Salt to taste and

  • Ghee(as per need)
  • How To Make Kashmiri Biryani:
  • Marinating the chicken with curd,red chilli powder,coriander powder,turmeric powder and salt,keep the mixture for about one hour.

  • After half cooking the basmati rice with salt,drain the water and keep it aside.

  • Soaking the saffron strands in one tbsp warm milk,keep it aside.

  • Heat ghee in a pan.

  • Adding cashewnuts,bay leaves,cardamom,cinnamon and cloves,Saute the mixture for few minutes.

  • Now add marinated chicken pieces and garam masala.

  • Mixing it well,fry till the curd is absorbed.

  • Now adding enough water,cook till the chicken pieces become tender.

  • Then divide the cooked rice into two portions.

  • Mix saffron milk with one portion of rice.

  • Add half of the chicken gravy to it.

  • Sprinkle half of the mint and coriander leaves.

  • Cover the cooked basmati rice,remaining chicken gravy,coriander and mint leaves.

  • Now close it with a lid and cook on low flame for about 20-25 minutes.

  • Serve it with pickle or raitha.
