Mixed Veg Curry

Today having a look at Mixed Veg Curry recipe.This is basically potato cooked with tomatoes and onions.Its very easy to make and tastes yummy!so lets get started.

Ingredients:

1.Four potatoes cut into pieces,

2.Two finel chopped onions,

3.One bay leaf,

4.One tbsp finel chopped ginger,

5.Five lengthwise sliced green Chillies,

6.Half tsp red chilli powder,

7.Two finely chopped tomatoes,

8.Half tbsp turmeric powder,

9.Two whole red chillies,

10.Half tbsp sugar,

11.Two bunch chopped cilantro,

12.Two cups Water

13.Proportionate oil and

14.Salt to taste

Method:

1.Heat Oil.Add bay leaf and whole red chilli,frying for 30 seconds.

2.Adding potato,ginger and onion,fry for a few minutes.

3.Then add salt,turmeric powder and red chili powder.

4.Now add chopped tomatoes,green chili,salt and sugar.Continue frying for few minutes.

5.Finally add water and cook till potatoes are cooked properly and gravy just thickens.

6.Remove from heat.Garnish with chopped cilantro leaves and serve with puri,paratha,roti,bread or plain rice.
