Egg Curry

Today going over Egg Curry recipe.So lets get started.

Ingredients:

1.Six-eight boiled eggs,

2.Two finely chopped onions,

3.Four-five slit in to two green chillies,

4.Three finely chopped tomatoes,

5.One tbsp garlic paste,

6.Three-five tbsps oil,

7.Three boiled potatoes,

8.Two curry leaves,

9.One tbsp chilli powder,

10.Three tbsps coriander powder,

11.Half tbsp turmeric powder,

12.Half tbsp pepper powder,

13.One tbsp garam masala powder,

14.One inch cinnamon stick,

15.Three-four cloves,

16.Six tbsps of freshly scrapped coconut,soaked in hot water for 15-20 mins and grinded into a smooth paste,

17.Three tbsps coriander leaves,

18.Two tbsps lime juice and

19.Salt to taste

Method:

1.Putting oil in vessel,let it become hot.

2.Add the onions,green chillies,curry leaves and fry till onions are golden brown. Lowering the flame,add Ginger and garlic paste and from fry for two mins.

3.Now add Chillie powder,corriander powder,turmeric pwd,pepper pwd and continue to fry on low heat till the oil comes to the surface.Add a little water to prevent from the whole stuff burning at the base.

4.Add the finely chopped tomatoes and continue to fry till tomatoes are soft.

5.Add the coconut pasteand the water which you washed the mixie,mix well – add two cups of water extra,leaving to heat till the gravy is thick enough.

6.Now adding the potatoes and eggs stir gentlyCover and leave to simmer for a further 2-3 mins.

7.Removing from heat,garnish with chopped coriander leaves.

8.After cooling down,add the lime juice,gently mix the curry,serving with rice, rotis,parathas or bread.
