Today having a look over Chicken Pulao recipe.Its as yummy as chicken biryani but takes less time to make.So lets get started with this!
Ingredients:
1.One chicken peices cut into medium pieces,
2.Two cups basmati rice,
3.Two medium sized chopped onions,
4.One tbsp ginger-garlic paste,
5.One large bay leaf,
6.One tbsp chopped mint leaves,
7.Chopped fresh coriander to garnish,
8.One cup yogurt,
9.One tbsp turmeric powder,
10.One tbsp jeera powder,
11.Three-four green chillies,
12.Two pieces cinnamon,
13.Three cloves,
14.Two-four cardamoms,
15.Three tbsps oil,
16.Two tbsps ghee and
16.Salt to taste
Method:
1.Washing the rice,soak it in water for 30 mins.
2.Sauting the chillies in ghee,mix the chillies,ginger,garlic and half the cinnamon, cloves and cardamom together.Grind the mixture into a fine paste.
3.Now add the ground spices along with yogurt to the chicken pieces,marinating for about 30 mins.
4.Heat the oil/ghee.Add the chicken marinade and rest of the spices and half the onions and cook over a low fire until the chicken is tender.
5.Heat the remaining oil and add the remaining cinnamon,cloves and cardamom.After few minutes add rest of the onions and fry until they are golden brown.
6.Now add the rice and fry until it is slightly brown.At this point,add proportionate water,turmeric and salt.
7.Let the rice mixture cook until the rice is half done.Now add the chicken along with the gravy.
8.Do not mix them,add coriander and mint leaves,placing a tight lid.Let the rice simmer for about 20 minutes.
9.Garnish with some chopped coriander leaves,cashews and a squeeze of lime/lemon.
10.Serve with raita!
