Carrot Pulao

Carrot pulao recipe is basically rice cooked with carrot.This is new recipe i have tried out.So lets get started with it.

Ingredients:

1.150-200 gms basmati rice,washed and soaked in cold water for about 30 mins,

2.250-300ml water,

3.One tbsp butter or ghee,

4.Half tbsp cumin,

5.Half medium-sized finely sliced onion,

6.One cinnamon stick broken up,

7.Two green cardamoms,split open the top of each pod,

8.One tbsp garam masala or ground mixed spice,

9.100 gms grated carrot,

10.Frozen garden peas(as per need) and

11.Salt to taste

Method:

1.Draining the rice,put into a saucepan with the water.

2.After boiling(allow to boil for about one minute),stir in the salt and the butter.

3.Place the lid on the saucepan and simmer for 12-15 minutes.Do not lift the lid during this time.

4.Remove the pan from heat and keep it covered for a further 10 minutes,preparing the rest of the ingredients.

5.Melt the ghee or butter over medium heat and fry cumin until they crackle.

6.Add the onions, cinnamon and cardamom.Fry until the onions are lightly browned (4-5 minutes),stirring frequently.

7.Add the garam masala stir and cook for 30 seconds.

8.Add the carrots,peas and the salt,stir and cook for 1-2 minutes.

9.Now add the rice,stir and mix gently.Remove the pan from heat.Serve hot!
