Today lets have a look over Yakhani Pulao Recipe which is basically a combination of mutton and rice typically famous in north india.Yakhni Pulao gets its name from the Yakhni(pronounced Akhni) or meat stock in which the rice is cooked.
Ingredients:
1.Half kg mutton(cut into pieces),
2.Two cups of basmati rice,
3.Half tbsp dry ginger powder,
4.1 tbsp fennel powder,
5.Three-four cloves,
6.Two-three black peppercorns,
7.Two inch stick cinnamon,
8.One bay leaf,
9.Quarter tbsp green cardamom powder,
10.Four tbsps ghee,
11.One and half tbsps caraway seeds(shahi jeera),
12.One pinch asafoetida(hing),
13.Three green chillies(stemmed),
14.Three cups mutton stock,
15.One cup Yogurt and
16.Salt to taste
Method:
1.Soak rice in three cups of water for half an hour.Then drain it and set aside.
2.Mix mutton with salt,dry ginger powder,fennel powder,cloves,black peppercorns, cinnamon,bay leaves and green cardamom powder.Leave to marinate for about half an hour.
3.Heat in ghee in a pan,add caraway seeds and asafoetida.Sauté for a few seconds.
4.Add the marinated mutton and sauté for two to three minutes.Add salt and whole green chillies.Add mutton stock and bring to a boil.Cover and simmer for ten minutes,stirring occasionally.
5.In another vessel whisk yogurt till smooth and add it to the mutton little by little stirring all the time so that the gravy is uniform.
6.Add drained rice and mix well. Cook on high heat. When the mixture comes to a boil, reduce heat and cook till both mutton and rice are done.
7.Garnish with fried sliced onions(optional) and serve piping hot with a vegetable raita or curry dish of your choice!
