Fish Biryani

Today we will see Fish Biryani Recipe.This is an indian recipe liked by seafood lovers.

Ingredients:
General:
Two cups basmati rice,soaked in water for 30 mins.

For the bouquet Garni:
1.Ten black pepper corns,

2.Two inch cinnamon stick,

3.Three brown cardamoms,

4.Ten cloves,

5.Four bay leaves and mace,

6.One tbsp caraway seeds(shahi jeera),

7.One tbsp lemon juice and

8.Salt as per your taste

For fish:
1.One kg fish pieces(make a paste with a little water,1 tbsp gram flour(besan),1 tbsp salt,2 tbsp lemon juice.Smear the fish with the paste and keep aside for 30 mins.Wash fish and pat dry).

2.Two sliced large onions,

3.two bay leaves,

4.Three tbsp green chillies,

5.Two chopped green chillies,

6.One and half tbsp red chilli powder and

7.One tbsp coriander powder

Powdered together:
1.Half tbsp carum seeds,

2.Four green cardamoms,

3.Six cloves,

4.400 gms yoghurt,

5.Four tbsps chopped coriander leaves and

6.Three fourth cup clarified butter(ghee)

Method:

1.Boil the rice in water along with salt,bouquet garni and lemon juice.

2.Cook till 90% done and drain.Discard the bouquet garni.

3.Heat half cup clarified butter in a pan.Saute bay leaves and fry onions till pink.

4.Now add the ginger,garlic paste and green chillies.Saute till brown.

5.Add the coriander and red chilli powder and saute for 15 seconds.

6.Add the whisked yoghurt and caraway seeds,cardamom and clove powder and cook for 5 mins.

7.Now slide in the fish pieces and cook for about 5 mins.Remove from heat.

8.Sprinkle the coriander leaves and one tbsp lemon juice on the fish.Layer the fish on the rice.

9.Pour the balance melted clarified butter evenly over the rice.Close with a tight lid and seal with dough.

10.Place the pan on top of a griddle on very low heat and cook for 6-8 mins.Serve with raita!
