Today we are going for Vegetable Dum Biryani recipe.This is also known as Pulao,Veg Biryani or Khichdi as well.
Ingredients:
1.Four cups rice(if possible basmati rice),
2.Four tbsps ghee,
3.Cloves(as per taste),
4.Two-three cardamom,
5.One inch cinnamom piece,
6.Two-three bay leaves for decoration,
7.Two sliced onions,
8.Half cup cashewnuts,
9.Two potatoes,Two carrots,one cup peas,ten-twelve french beans and one cup cauliflower(all cut into pieces),
10.Red masala(six-eight patna red chillies,cashewnuts,one ginger pieceand two big onions grinded together) and
11.Masala curd(half cup curd,1/4 cup corriander leaves and 1/4cup mint leaves grinded together)
Method:
1.Wash and dry the rice on a napkin.
2.Heat ghee frying onions and cashewnuts till they turn golden brown.
3.In the same ghee add cloves cardamom,cinnamom,bay leaves and add dried rice.Fry for sometime till nice auroma comes out of it.
4.Add proportionate hot water and salt to the above mixture.Cook on slow flame.
5.In a cooker add four tbsps of ghee,red masala and two cups of water little by little.
6.When masala is well fried,add all the vegetables frying for five minutes
7.Add curd masala,salt and one cup of water.Give one whistle and put off the gas.
8.Mix together rice & vegetable gravy arranging in a bowl.
9.Garnish with onion,cashew nuts andcoriender leaves.Put finely chopped mint lezves on top.
10.Cover with foil and put in the oven for 10 to 15 minutes for dum biryani.Serve hot!!
