Today we will see Mixed Vegetable Curry recipe.
Ingredients:
1.One cup mixed vegetables sliced, boiled (like carrot, cauliflower, beans, peas, potato, etc.),
2.One tomato sliced,
3.Half grated coconut,
4.Half tbsp grated ginger,
5.Half tbsp crushed ginger,
6.Three green chillies,
7.One tbsp sesame seeds,
8.Half tbsp each cumin and mustard seeds,
9.Half tbsp red chilli powder,
10.One tbsp lemon juice,
11.Two cloves,
12.One inch cinnamon piece,
13.Two tbsps butter and
14.Salt as per taste
Method:
1.Drain the boiled vegetables,keeping the stock aside.
2.Blend together,coconut,chillies,sesame seeds,cinnamon,cloves in mixie.
3.Heat butter,add seeds,allow to splutter.
4.Add ginger,garlic and paste.
5.Stir,fry for 3-4 minutes.
6.Add vegetables except tomatoes.
7.Add half cup stock.Cover,simmer for 5 minutes.
8.Add salt chilli powder,tomatoes and cook till gravy is thick.
9.Serve hot with parathas,chappatis or bread!
