Ingredients:
1.One kg mutton(cut into pieces),
2.Half kilogram basmati rice(pre-soaked for atleast half an hour),
3.Two medium thinly sliced onions,
4.Two cinnamon sticks(dal cheeni),
5.Five Cardamom Pods(choti ilaichi),
6.Six cloves(lavang),
7.One tbsp garlic paste,
8.One tbsp ginger paste,
9.200 grams plain yogurt,
10.Half tbsp turmeric powder,
11.One tbsp red chilli powder,
12.Three tbsps coriander powder,
13.One tbsp cumin powder,
14.Half tbsp cumin seeds,
15.Few saffron strands soaked in five tbsps of water,
16.Ready fried onions for garnishing,
17.Chopped fresh coriander leaves and
18.200 grams of clarified butter or cooking oil
Method:
1.Marinate the mutton pieces with the plain yogurt,turmeric powder,coriander powder,red chilli powder,ginger paste,garlic paste and cumin powder.
2.Add the sliced onion and salt and mint to the marination.
3.In boiling water add clarified butter or oil,cinnamon sticks,cardamoms,cloves and cumin seeds and boil the rice until it is half cooked.
4.Add the rice to the mutton.
5.Pour a little clarified butter or oil and saffron water on rice,cooking the rice on dum for about 30-45 minutes or until done.
